Another unique single bush or Dan Cong (单 枞) tea varietal, White Leaf or Bai Ye (白叶) is named for its delicate lightly green leaves. Like all other Dan Cong oolongs, it must be harvested from physically proximate and genetically identical trees and bushes, in order to protect the integrity of its unique flavors and aromas, hence “single bush”. Its taste is delicate and floral, with sugary and peachy notes and light but stimulating tannins.

All of our Dan Cong oolongs from 2020 onwards are given 3-4 roasts, more than most other teas of this type on the market. In addition to giving the teas more texture and sweetness, we find that this also helps preserve the shelf life of the teas and increased their potential to age, though they must be rested for at least a year in order to let the roast mellow before consuming.
