Dong Ding or “Frozen Summit” is named for the high mountain in the Lugu region of Nantou county the tea originally hails from. Now the name refers more to a processing standard than a specific appellation - Dong Ding oolongs are roasted, sometimes as many as three or four separate times in order to reduce water content in the leaves and enhance their sweetness and shelf life. Dong Ding competitions have grown quite popular in recent years, with over 5,000 entrants. This particular lot won second place in the Lugu Dong Ding Tea competition.
This is an aggressively roasted oolong that is mild, complex and elegant. A very high quality and pleasing tea, it should be enjoyed slowly over many steepings. The tea begins mild and floral but develops bold and woodsy flavors as the leaves unfurl. The roast profile stays even across many steeps, and can be re-infused as many as 8-10 times. This one is for the connoisseurs.
