White Peony - Gold Medal
White Peony or Bai Mu Dan is a classic white tea from Fujian, China. Unlike its cousin, Silver Needle which is picked only from the early spring buds, White Peony includes the bud and the two lower leaves. The bud of the tea leaf contains the most caffeine, and gives the tea a stronger and sharper taste. The lower leaves and the stem, however, give more sweetness to the brewed tea, making the White Peony slightly rounder and more mellow. White teas are made similarly to green teas, but are not fired and thus the leaves are allowed a small amount of natural oxidation.
This tea placed first in the 2022 Northern Fujian Tea Competition (Tian Fu Bei Tea Competition), beating hundreds of other lots to be considered the “ideal” White Peony. It taste is classically sweet and floral, with subtle stonefruit flavors in the background. It will improve in flavor for several years as it ages.
