Early Spring Mao Feng
Literally meaning “fur peak”, for the very fine hairs left on the tea leaves, Mao Feng is one the most widely enjoyed green teas in China. Though many varieties of Mao Feng are grown, early spring (or “pre-Qingming” as it is sometimes referred to as) is always the most sought after. The taste is much lighter, sweeter, and more fragrant than Mao Feng grown later in the season when the leaves have had more time to mature on the bush. One of our favorite green teas from this year’s harvest, the taste is lightly sweet and not too grassy. Somewhat on the subtler side, it takes some care to brew (use cooler water to start when brewing!). Nevertheless it should be appreciable by any level of tea drinker due to its being sweeter and less grass-forward than other greens of this type.
