A very sophisticated and high aroma oolong from the Phoenix Mountains (凤凰山) in Guangdong, Ba Xian translates to “Eight Immortals.” It is named for the original eight mother plants which date back to the Song Dynasty from which this unique cultivar spread. As a Dan Cong (单 枞) oolong, it must be harvested from a single grove of genetically identical tea bushes. Dan Cong teas are famous for their varietal and location-specific flavor and aroma profiles. This is a complex tea with interlaced notes of orchids, stonefruits, and bitter herbs. It was roasted 3 separate times over charcoal in order to enhance the flavor and aroma and increase its shelf life. This is a classic aroma-forward Phoenix tea which should be appreciable by fans of authentic Chinese oolongs.
